Quinoa

Composition of quinoa seed
Quinoa seeds are coated with a coating that contains saponins — a group of glycosides with a bitter taste, which makes the seed less attractive to birds. Before consumption, the saponins must be removed (Coulter et al., 1990).
The composition of raw quinoa is approximately:

  • Protein: 15%
  • Fat: 6%
  • Starch: 60%
  • Ash: 4%
  • Fiber: 3%
  • Water: 12%
